TOMATO SOUP WITH RED LENTILS AND BASIL, AVOCADO AND FIG TOAST made on SEED PROTEIN CRACKERS. What went wrong with this lunch of mine? Actually nothing. So tasteful, so healthy and soooo simple to make! I was actually very lazy and just used various ingredients I had in my fridge and pantry, and that’s what I love. Oh and yes, this lunch was entirely vegan ofc!☺️ So once again; healthy food doesn’t have to be boring nor difficult to make! - The tomato soup consists of yellow onion, strained tomatoes, tomato purée, garlic, red lentils, vegetable stock, some nice spicing and fresh basil.
