TACO CHEESE CUPS Makes: 24 INGREDIENTS 2 cups shredded cheddar cheese 1 pound ground beef ½ teaspoon garlic powder or dried minced garlic 2 tablespoons cumin 2 tablespoons chili powder ¼ cup water 1 teaspoon salt Tomatoes, to serve Guacamole, to serve Greek yogurt, to serve PREPARATION Preheat oven to 350˚F (180˚C). Spoon 1 tablespoon piles of cheddar cheese 2 inches apart onto a parchment paper-lined baking sheet. Bake for 5-7 minutes, or until edges of cheese piles are golden brown. Cool for 1 minute. Press cheese piles into mini muffin tin slots to form cups. Allow cheese to cool completely before removing. Add ground beef and salt to a skillet over medium-high heat and cook until browned. Drain grease from the meat. Add garlic, cumin, chili powder, and water to skillet and stir until well-incorporated. Distribute meat to cheese cups. Garnish with tomatoes, guacamole, and Greek yogurt. Cinnamon Apple Bars Makes: 12-15 bars INGREDIENTS 3 apples, thinly sliced ¼ cup sugar 1 tablespoon cornstarch 1 tablespoon cinnamon 2 cups flour 2 cups old-fashioned oats 1 cup brown sugar ½ teaspoon baking soda ½ teaspoon salt ¾ cup butter, melted PREPARATION 1. Preheat oven to 350˚F (175˚C). 2. Place apple slices in a large bowl and gently mix in sugar, cornstarch, and cinnamon. Set aside. 3. In another bowl, combine flour, oats, brown sugar, baking soda, salt, and butter. Mix until crumbly. 4. Line a 9x13-inch baking dish with parchment paper and pour ⅔ of the oats mixture in the bottom of the pan, pressing firmly to pack it down to make a crust. 5. Pour apples over the crust and spread in an even layer. Pour the remaining oat mixture over the top and spread evenly. 6. Bake for 30 minutes, or until golden brown. 7. Cool completely before cutting. 7. Enjoy!

Neapolitan Ice Cream Cone Cupcakes Servings: 36 INGREDIENTS Brownie mix, plus box ingredients Strawberry cake mix, plus box ingredients Vanilla cake mix, plus box ingredients 36 cake ice cream cones 1½ cups unsalted butter, softened 4 ¾ cups powdered sugar 1½ teaspoons vanilla 3-5 tablespoons milk Maraschino cherries, optional, to serve Sprinkles, optional, to serve PREPARATION 1. Preheat oven to 350˚F (180˚C). 2. Place cones in each well of muffin tin. 3. In separate bowls, prepare brownie, strawberry cake, and yellow cake mixes per box instructions. 4. Fill each ice cream cone with 1 tablespoon of brownie batter. Top the brownie batter with 1 tablespoon of strawberry cake batter followed by 1 tablespoon of vanilla cake batter. 5. Bake for 20-22 minutes, or until toothpick inserted in center comes out clean. 6. In a large mixing bowl, beat butter until creamy. Gradually add in the powdered sugar. Add vanilla and 3-5 tablespoons milk until you reach thick and smooth consistency. 7. Transfer frosting to piping bag and add a dollop to each cone like a soft serve ice cream. 8. HOMEMADE SOFT PRETZELS Servings: 8 INGREDIENTS 1½ cups warm water 1 tablespoon salt 1 tablespoon sugar 1 packet dry active yeast 4½ cups flour 3 tablespoons oil, divided ⅔ cup baking soda 2 eggs, beaten Coarse salt PREPARATION Preheat oven to 450°F (230°C). In a bowl, mix water, salt, and sugar until combined. Add yeast, and let rest 5 minutes until yeast starts to foam. Add flour and 2 tablespoons of oil, and mix thoroughly until a dough forms. Remove the dough and use the remaining oil to cover the bowl. Cover bowl with plastic wrap, and leave in a warm place for 1 hour. Cut dough into 8 pieces and roll them out into thin ropes, twisting the two ends to form a pretzel shape. Add baking soda to a large pot of water, and bring to a rolling boil. Boil each pretzel for 30 seconds per side. Transfer pretzels to a baking sheet, brush with egg wash, and sprinkle with salt. Bake for 10-15 minutes, until golden brown. Enjoy! Inspired by:

Banana Bread Cookies Makes: 24 INGREDIENTS ½ cup sugar ¼ cup brown sugar 1 teaspoon vanilla extract ½ cup butter, softened ½ cup Greek yogurt 1 egg 2 ripe bananas 2½ cups flour ½ teaspoon baking powder ½ teaspoon baking soda 1 pinch salt 2 teaspoons cinnamon ½ cup chocolate chips PREPARATION 1. Preheat oven to 350˚F(175˚C). 2. In a bowl, whisk sugar, brown sugar, vanilla extract, and butter together until creamy. 3. Add Greek yogurt, egg, and bananas. Mash bananas and mix thoroughly. 4. Gently fold in the flour, baking powder, baking soda, salt, and cinnamon just until combined. 5. Add chocolate chips and stir in gently. 6. Baked Chicken Taquitos Makes 8-10 taquitos INGREDIENTS ½ teaspoon paprika ½ teaspoon chili powder ½ teaspoon cumin 1½ teaspoons oregano 1 teaspoon garlic powder 1 teaspoon onion powder 1 teaspoon salt ½ teaspoon pepper Olive oil, to taste 2 boneless, skinless chicken breasts 4 ounces cream cheese ¾ cup cheese blend 12 flour tortillas PREPARATION 1. Preheat oven to 400˚F (200˚C). 2. In a bowl, add the paprika, chili powder, cumin, oregano, garlic powder, onion powder, salt, and pepper and mix to combine. 3. Place the chicken breasts on a parchment paper-lined baking sheet. Drizzle with olive oil, pour half of the seasoning over the chicken and spread on both sides of the chicken. Save the remaining seasoning for later. 4. Bake for 30 minutes, flipping halfway, or until the internal temperature of the chicken reaches 165˚F (75˚C). 5. Shred cooked chicken and add cream cheese, cheese blend, and remaining seasoning. Mix well. 6. Place a couple of scoops of the chicken mixture across the bottom third of a flour tortilla. Roll up tightly and place on a baking sheet. 7. Bake for another 15 minutes, or until golden and crispy. 8. Enjoy!

Slow Cooker Shredded Chicken Sliders Servings: 10 INGREDIENTS 1 onion, sliced 3 boneless, skinless chicken breasts 1½ teaspoon seasoned salt ½ teaspoon pepper 1 tablespoon dried oregano 1 tablespoon Dijon mustard ⅓ cup honey 6 cloves garlic, minced 12 slider buns PREPARATION 1. Add all ingredients to a slow cooker and stir until chicken and onions are coated with seasonings. 2. Cook on high for 3-4 hours, or until chicken is cooked and shreddable. 3. With a set of tongs or two forks, shred the chicken and stir into the juices. 4. Distribute evenly between slider buns. 5. Enjoy!

Baked Chicken Fries Servings: 4-5 INGREDIENTS 4 boneless, skinless chicken breasts 2 cups plain bread crumbs 1 cup flour 5 eggs, beaten 1 teaspoon salt ½ teaspoon garlic powder ½ teaspoon onion powder ½ teaspoon paprika ½ teaspoon dried basil ½ teaspoon dried oregano ½ teaspoon pepper PREPARATION 1. Preheat oven to 375˚F (190˚C). 2. Slice chicken breast in half, and cut into thin strips about the thickness of a french fry. 3. Season bread crumbs with salt, garlic powder, onion powder, paprika, dried basil, dried oregano, and pepper. Mix well. 4. Dredge chicken strips in the flour first, then cover in egg, and coat with bread crumbs. 5. Place on a baking sheet lined with parchment paper and bake for 20 minutes, flipping halfway. 6. Enjoy!

Easy Orange Chicken Servings: 4 INGREDIENTS Marinade ¼ cup soy sauce 2 tablespoons orange juice ¼ cup cornstarch 3 boneless, skinless chicken breasts, cubed Sauce 2 tablespoons oil ¾ cup orange juice 1 tablespoon soy sauce 1 tablespoon hoisin sauce 1 tablespoon rice vinegar 2 tablespoons brown sugar 1 tablespoon cornstarch PREPARATION 1. In a bowl, combine marinade ingredients. Add chicken, and let marinate at least 1 hour. 2. In a pan, heat oil on medium-high heat. Remove chicken from marinade with a slotted spoon, and cook all sides until golden brown. 3. Add sauce ingredients to pan and bring to a boil, mixing continuously, until mixture thickens. 4.
