How is the day before Fri-YAY, beauties and heroes?
I still had another rough day, but I feel slightly better. Caffeine headaches are slowly going away, I am a lot less anxious today and I am not craving salt as much as I was yesterday. I imagine by the end of the week I will be right as rain!
So check this out haha. I went to the grocery store today to pick up some Veg for tonight's dinner. I decided on Superstore today instead of Sobeys for grocerys because I have been thoroughly disappointed in the wilted AF spinach and the yellowed Kale. Superstore kicked ASS for produce, everything was fresh, clean, and super well organized, even if I did have to pay a couple extra pennies for it. But that's not the thing. As I was walking in, I wasn't used to their plastic bins, and picked up one too many. The bottom one fell out, and as it was falling I was still walking and I kicked it like, SuperBowl through the uprights hard and it went flying a minimum 20 feet and caught wicked air haha. Nobody said anything, because I am a 6'2 inch 346 pound man, but I sure got a lot of "What the fuck is your problem buddy" looks haha. I had to go retrieve it, apologize to the people that had to dodge it, and then put it back, all while trying to play it ultra cool haha.
But on to dinner haha. Tonight I decided to make a super hearty stew, but we had to Vegan it hard. So it has all the veg in it haha. Tonight I give you.. my Vegan Kale and Green Lentil Stew. I started with EVOO, red onions and garlic, because always. Then I added carrots that I coined, zucchini that I quartered, chick peas, and some green lentils that I soaked. To this I added dried Basil, 2 cups of water, a can of low sodium diced tomatoes, and some black pepper.
When that was all cooked down and simmering, I added fresh kale, and way way too much Sage because I don't ever know how much sage is too much sage until it's mega too much sage haha. I then added some tomato paste, and let it all reduce to keep as little liquid as possible. Anndddd voila!
