Quick Spicy Ground Turkey and Veggies Breakfast
Add EVOO to a hot sauté pan. Add turkey. Then season turkey with salt, pepper, red pepper flakes, and cayenne. Stir and break up your ground turkey until fully cooked. Drain excess liquid. Set aside.
In another sauté pan over med-high heat with a splash of EVOO add carrot noodles (made with a peeler). Once that starts to soften add quartered zucchini and asparagus. Season veggies with a bit of salt, pepper, and cayenne. I like my zucchini and asparagus firm so I cook it for about 4-5 minutes just until heated through and has slightly softened.
In a serving bowl add some of the ground turkey and your veggies.
Crack an egg in the same pan you cooked your veggies. I like mine sunny side down and still very soft and runny inside. Once I flip it sunny side down I season with a pinch of salt and pepper.
