I had to work all day today so I thought I would try using my crock pot and I thought I could trust the boyfriend to help me out with one step of the process... the tried his best. ๐Ÿ˜… I made some chicken and dumplings tonight! I love crock pots because you can just throw everything in and leave it cooking all day, this recipe though calls for shredding chicken and adding the bisquits and then cooking another 2 hours on low. I asked the boyfriend to do this part and like I said he tried his best! Haha I can specifically remember telling him to "cut the bisquits" but big fat bisquits are good too I guess! ANYWAYS.... I'd give this recipe a 7.7 out of 10. Pretty good taste wise, fairly simple to make but just doesn't quite taste like mom's. I get a lot of questions about my tofu ricotta and after seeing that kite hill sells their vegan ricotta for $12 for the tiniest little tub, I decided to share my recipe (if you can even call it that!) . Use a block of extra firm tofu. Drain the extra water but donโ€™t press the block. Crumble the block into a bowl and mash with a fork or Marcy-style (see video). Add salt, pepper and oregano to taste. Mix. Add it to salads, lasagna, pasta, toast or whatever else your heart desires... Enjoy!
