I get a lot of questions about my tofu ricotta and after seeing that kite hill sells their vegan ricotta for $12 for the tiniest little tub, I decided to share my recipe (if you can even call it that!)
Use a block of extra firm tofu.
Drain the extra water but don’t press the block.
Crumble the block into a bowl and mash with a fork or Marcy-style (see video).
Add salt, pepper and oregano to taste.
Add it to salads, lasagna, pasta, toast or whatever else your heart desires...
