Mondays are the dreamiest during the summer. We all sleep in (aka 9:30 which if you're a parent, is bliss), have a late breakfast, and plan out our adventures for the day. There isn't a ton to do in our immediate area, but we live within a reasonable drive of Baltimore, Lancaster, and Philly AKA the three cities that truly speak to our souls. This week we're making the drive to Lancaster to explore the city and visit an arcade Chris and Wallace have been wanting to go to. The other six days of the week are pretty much non-stop, so it's been so rewarding to set aside Mondays as an intentional day of relaxation lately. Spending a full day with my boys makes me feel like the luckiest lady, and starts the week off on the right foot. finally sharing my go-to CURRY CHICKEN SALAD recipe! this chicken salad is a staple in my weekly meal prep for two reasons: it’s so dang good + so easy to make 💃🏻 plus, the flavors are legit... the spicy curry balances so well with the fresh mint! recipe below (makes enough for a week of lunches for me!): • • +3 shredded chicken breasts (throw these in the instapot for about 10 minutes with chicken broth and they shred so easily) +10-15 chopped fresh mint leaves +2 chopped @ndmedjooldates Medjool dates +1/4 cup chopped walnuts +1 tbsp @navitasorganics hemp seeds +2 tbsp @thegoodspoonfoods vegan curry mayo +2 tbsp plain Greek yogurt (trust me, this makes it extra creamy) MIX all ingredients together + enjoy! 💛

Today's adventure in cooking new things is a black bean and Jamaican jerk jackfruit taco on a fried sprouted grain tortilla. It's loaded with zucchini, peppers, and tomatoes and there's a garnish of mango and fat free Greek yogurt for an extra kick of sweetness and #protein. My precious 1 tsp of fat was all used to fry the tortilla, loading that satisfying oil into a crispy, crunchy, carby happy place. A few years ago I realized that it's so important that I listen to what my body needs. Sometimes there's an expectation that we follow and enjoy what we are given, but maybe that doesn't match with what we feel like. Whenever I feel hungry, for sure I'll eat + I eat what I want. If it's 9am + I'm not hungry I'll have my breakfast later, even if I have it at noon or later. But therefore also I don't stick to rules like "I cannot eat before/ or after..." (like you would do at a strict intermediate fasting). If I feel like having something sweet at night for dinner, I'll follow that feeling...no matter what other people say! Cheating my body by adapting to something that I am expected to do, won't make me feel happy at all. Therefore, if you haven't so far, I can just encourage you to do, and to listen to the insight of your body and follow what your body really needs❤ . As always...for 1 bowl you need: about 6 table spoons of (glutenfree) oats ☆ 1 tea spoon of physillum husks ☆ a hand full of dates, cut in slices ☆ a pinch of fresh vanilla/vanilla powder/vanilla syrup ☆ fruits as topping such as pomegranate + persimmon ☆ optional: cacao nips . . Put all ingredients in a bowl and mix. Add a cup of soy milk (about 200ml) and stirr for a few seconds until all ingredrients have soaked and you get a creamy texture. Leave for a few minutes, if possible over night. Cover with fruits and cacao nips🍌🥝🍓.
