- - - - - “I chose to study the MSc Gastronomy because I love interacting with plants and people. When applying for the course I had previously worked as a chef, studied as a biologist, and become a keen community crofter. At the time, agricultural science and the 'future of food' were my main interests.
By the end of the course I gained a new appreciation for the role that culture - not just science - plays in the production, governance, and eating of food.
It was enlightening to look inside myself, finding fundamental weaknesses in many of the assumptions I
made about the world through food. I became a better listener, more critical and less cynical, increasingly compassionate and less judgemental of others, and gained the confidence to follow a new path professionally.
The programme is highly relevant today because the status quo regarding food education is often not very helpful. The emphasis of MSc Gastronomy lies not on learning facts and figures, not on working within any particular paradigms, but rather on holistic and
independent thinking. The former ways of studying food are limiting, whereas the latter are liberating.”
