POKE BOWL | Here's my take on a poke bowl that was super quick and easy to prepare.
Meal preparation doesn't need to be time consuming and throwing together a few fresh and nutritious ingredients from the fridge and pantry can make the perfect lunch or snack. The key is making sure you have regular, fresh variety on hand so sometimes a bit of prep like cutting up vegetables and storing in containers in the fridge after a shop goes a long way to keeping your healthy meal choices on track for the week (and your veges last longer this way too). ~
Here I've thrown together some leftover roast chicken breast, fresh green beans and peas, the last tablespoon of homemade hummus, mung bean sprouts, pumpkin seeds and a few grapes for sweetness (the last of what my kids left me!). Other times I'll throw in some avocado, cucumber, baby spinach leaves, cherry tomatoes, carrot sticks, nuts or some sauerkraut. I also like to make a batch of boiled eggs to keep handy so I can easily change up my main protein (and my kids can help themselves to one straight after sport training).
