¾ Medium Sized Kent Pumpkin cubed
1 Large Brown Onion chopped
3 Stalks Celery chopped
4 Cloves Garlic chopped
2 Thumb Sized pieces of Ginger chopped
1 Green Chilli chopped
2 Kaffir Lime Leaves
2 Tbs Yellow Curry Paste
2 Tbs Ghee (or butter)
2 Tbs Fish Sauce
1 Lime juiced and zested
500mls Chicken Stock
400mls Coconut Cream
Water (enough to cover)
Melt ghee in large soup pot, sweat onion, celery, garlic, ginger, chilli and kaffir lime leaves together for 5 minutes
Add yellow curry paste, salt and pepper and cook for further 2 minutes. Add Pumpkin, coconut cream, chicken stock and enough water to cover pumpkin.
Bring to a simmer and cook until pumpkin begins to break apart, this should take about 25-30 minutes.
Add lime juice and zest, fish sauce and blitz with stick blender until smooth.
