Happy Fri-YAY! I’m celebrating the start of the weekend with these bad boys (cause someone got us the waffle maker from our registry! - is it taboo to start using your gifts before the wedding? 🤷🏻♀️). Anyway, here’s my recipe for savory sweet potato waffles, which I paired with my slow-cooker chili that I will be sharing soon!
4 small sweet potatoes, skin on, shredded
1 Tbsp of each: salt, pepper, @traderjoes onion salt, garlic powder, chili flakes
Shred the washed sweet potatoes using a box grater onto a towel. Once shredded, squeeze all the excess water out
Combine all ingredients in a large bowl
Oil/butter the waffle maker and place half of the mixture in, spreading it out to the edges, but leave 1/2” so that it doesn’t spill out.
Cook until the green light comes on, and then leave in for an additional 3-5 min, depending on the waffle maker
Repeat with the remaining batter
Enjoy as a side of eat it as is!
