Perfect way to keep warm and stay healthy on these cold snowy days. Lots of greens and healthy veggies. . Ingredients 2 cups of chopped potatoes 2 cups of chopped eggplant 2 cups of ribboned zucchini 4-5 cups of water 1 can of coconut cream (take only solids) 1 cup of chopped onions 2 tbsp of coconut oil 1 tbsp of maple syrup or alternative 4-6 minced garlic cloves 1 thumb of minced ginger 2-3 tbsp of tamari soy sauce or to taste 1 tbsp of garam masala 1 tbsp of cumin powder 2 tbsp of curry powder 1 1/2 tbsp of turmeric powder or 2 thumbs of fresh 1/2 a tsp of chipotle powder 1 cinnamon stick 3-4 Japanese dried red peppers (Optional) 3 tbsp of lime juice 1/2 a tsp of lime zest . . Directions 1) Take a frying pan add your onions (and cinnamon stick and dried red pepper) and start caramelizing them with coconut oil. (5-7) on medium heat. 2) Add seasoning mentioned above, ginger, garlic, lime zest, (fry for 1 min) then add your soy sauce, , lime juice and maple syrup. Cook for 5-7 minutes. (Take out cinnamon stick and red peppers) 3) Add your potatoes, eggplant and saute for 2 min. 4) Add your 4 cups of water (add more if needed) simmer for 10 minutes or so and add your coconut cream. (The night before put the cans in the fridge, then take them out of the fridge and only use the solid cream, leave out the liquids.) 5) Let this simmer until desired consistency and you can add veggies earlier or later depending how firm you want them. 6) At the end serve onto a bowl, add fresh peeled zucchini (or add earlier), and topped with cilantro, black sesame seeds, green onions and more lime juice. It's my veggie-versary! I've learned a lot in the past year and each new thing I discover about the agriculture industry pushes me further towards a plant-based life. You do not need meat to be healthy and you do not need meat to live; it's never too late to chose to cut it out from your life. There's been times where I've been tempted to go back but it always helps to remind yourself of the true cost of eating meat - the unnecessary slaughter and the strain it puts our planet under 🌎. The cognitive dissonance between loving animals but eating meat is what the industry thrives upon, and if you're reading this a struggling vegetarian / vegan it always helps to stay aware! I don't like to talk about being veggie too much for fear of coming across preachy but I feel this is a good opportunity to say it: Going vegetarian is honestly something I'm very proud to have done and kept at, because I believed then and still firmly believe now that animals are not ours to exploit🐮🐷🐥🦆🐠🦃🐑🦀🦑🐙 #fortheanimals🐾

Zucchini Noodles with Avocado Cream Sauce 🥑🍅🥑🍅 . . . ‼️This is a quick and easy 30 minute meal that is full of flavor! I did not follow one specific recipe so I will post what I did below‼️ . . Roasted Vegetables: . 1. Heat oven to 350 degrees 2. Slice 1/2 red onion, halve 1 cup of cherry tomatoes, and thinly slice 4 garlic cloves 3. Place vegetables on a non stick baking sheet, drizzle with olive oil, and season with salt, pepper, and smoked paprika 4. Bake for ~ 20 minutes Avocado Cream Sauce: . 1. Combine 1 avocado (pitted), 1 tbs of water, 1 tbs of olive oil, 1 tbs of mayo, 1 tbs of lemon juice, and 1 garlic clove to a food processor 2. Process on the Pulse mode until smooth and creamy 3. Salt to taste .
