Salmon tandoori with quinoa, yogurt and salad.
Mashed tomatoes 🍅
1 chopped onion
3 tomatoes, 1 for tandoori and 2 for salad
Oil for frying
4 slices of salmon
Spinach for salad
Coriander for salad and topping for tandoori
1 lemon for salad
1/2 stock cube
Yogurt for side and topping
Low fat coconut milk
Cucumber for salad
Fry the chopped onion in oil, add 1 chopped tomato let fry until golden. Add 1-2 tablespoons of tandoori spice(more if you want) and frying the spices. Add 1-2 dl of the mashed tomatoes and add some water if it gets to sticky in the pan. Add some coconut milk and fry it for 8-10 min. It should end up like thick paste almost. Taste of the mix with the spice and coconut milk so it gets the tandoori flavours.
Put the salmon in a heat protected form and pour the tandoori mix over. Put in oven with som yoghurt on top with it in 15-20min.
Put 2 dl of quinoa in a skillet and 4 dl of water and put the half stock cube inside. Be sure to put the pot lid on and set on medium heat(5out of 9) until the water is gone.
Take 2 chopped tomatoes in a bowl, chopped coriander, chopped cucumber, chopped spinach and pure over lemon juice, top with salt and pepper.
Serve everything together on a plate and add som yoghurt on the side ❤ enjoy 😊
