Thought I'd give cauliflower rice ago because I'm obligated to do so as I'm your favorite #fitgirl. I baked it in a pan with some curry and chili powder and later added some yoghurt, pineapple, sweet potato and cashews. It was actually really nice and quicker than boiling the cauliflower as florets!

Roasted Japanese Sweet Potatoes with Honey Chipotle Dipping Sauce! You could use any roasted veggies that you want, but I just roasted sweet potatoes in avocado oil and salt at 400 until a little crispy. The dipping sauce is the star of the show though. Take 1/2 cup of avocado oil mayo (I used @chosenfoods) and mix it with 2 TB raw honey (I use a local honey, @williamshoneytn) and 1/4 tsp of smoked paprika or chipotle seasoning. New on the blog is this creamy cauliflower mash 🌸 cauliflower has become such a staple item in our house due to it’s versatility and amaaazing health benefits (seriously, look up how awesome cauli is). We use it as a rice substitute, baked into popcorn bites, or as faux mashed potatoes. The last one is my fave for sure. Creamy & fluffy just like your regular mash, but low-carb and made from our favorite cruciferous veggie 🥦 I recommend freezing big batches so you always have some on hand. Healthy oat chocolate muffins.🍫🍫🍫 Perfect #afterschoolsnack or a mid morning treat for you mum. 1 cup oats 1 cup milk 1/4 cup coconut oil, melted 1/4 cup cacao 1/4 cup rice malt syrup/maple/honey 3 eggs 2 TSP baking powder 1/2 TSP baking soda 80g dark choc, crushed or chopped 1/2 cup wholemeal spelt flour 1 cup regular spelt flour Preheat oven to 180c. Use 12 silicone muffins cups or grease a muffin tin. Soak oats in milk. Whisk together oil, syrup, baking powder and soda and dark chocolate. With a fork mix in oat, milk, spelt and cacao. Pour into prepared muffin cases and bake for 20 mins. Check for another 10 mins. Last dinner before vacation 🙋🏽. Maple Soy Glazed Salmon Bowl. . . . Off to the Middle East for the first time 🇱🇧🇪🇬 #lebanon #egypt . . . For the Maple-Soy Salmon 🍁 -Marinate 6oz salmon filet with 1/3 parts soy sauce & 2/3 parts maple syrup, dash of cayenne pepper for 30 min -Drain marinade into a small saucepan -Boil marinade until reduced to glaze, about 5 minutes -Heat a heavy nonstick skillet over medium heat -Add salmon and cook until slightly charred outside and just opaque in center, about 3 minutes on each side. -Drizzle salmon with glaze -Had mine with arugula, radishes, avocado, purple cabbage, green onions, sesame seeds & sushi rice

Just posted the recipe for this vegan carrot top pistachio pesto! 🥕We’ve been wanting to make carrot top pesto for quite a while now and glad we finally did - the carrot tops are subtle in flavor and don’t overpower the basil. The best part, however, it repurposing a part of a plant we don’t typically think to use. This is the only way we’ve used carrot tops - do you guys have any other suggestions? We’d love to hear! would ya look @ that zaa w a potato crust🍕🤤🙌🏽 I’m going to have to experiment more w toppings😉 here’s what I did: 1. steam/boil the potatoes until soft 2. mash potatoes w salt & other spices in big bowl 3. press potatoes on parchment paper on cookie sheet 4. bake @ 400 for 45 min 5. spread tomato sauce & add toppings (chopped broccoli, cauliflower, & onion) 6. EAT IT😋
